Eggplant is a favorite of the gardeners. The garden eggplants are beautiful and were relatively easy to grow. These eggplants were used in the Food and Society class for a research presentation. A student harvested the eggplants (with supervision from a garden manager), processed them into baba ganoush, wrote a short academic essay on the plant’s origins, uses, and cultural significance, and presented this information to the class in Powerpoint form. The other students were then invited to try the baba ganoush made from garden eggplants, exposing them to an exotic dish many had not tried before.
Food and Society encourages students to step outside of their comfort zone in order to better understand the complexity of the world we live in and, that simultaneously, everything is relative.
